ROMAINE, RADISH, AND CUCUMBER SALAD WITH TAHINI DRESSING:

Dressing:

¼ cup well-stirred tahini

¼ cup water

2 ½ tablespoons fresh lemon juice

2 tablespoons soy sauce

1tablespoon honey

1 small garlic clove, minced

½ teaspoon salt

1/8 teaspoon cayenne

 

Salad:

1/2 lb. romaine, torn into bite-size pieces (6 cups)

1 bunch radishes, trimmed, halved, and thinly sliced (1 cup)

½ cucumber, halved lengthwise and thinly sliced crosswise

4 scallions, thinly sliced

 

In a blender, process all dressing ingredients until smooth. In a large bowl, toss together all salad ingredients and just enough dressing to coat vegetables.
